On Friday, June 3rd, 2022, it was National Doughnut Day! My plan was to bake some delicious cake doughnuts on Friday, but having worked in a Doughnut Shop in college during National Doughnut Day, so I decided to just enjoy the fact that I didn't have to touch or see doughnuts. But I still wanted to celebrate the day MY way. I spent Friday creating this doughnut recipe and the idea of making the doughnut dough multi-colored. I like to have fun while creating and baking and I love colorful things. I worked an hour on this recipe, researching the best colors to use for cake doughnut butter as well as how to properly make a chocolate glaze. I was so excited to bake these today. However, like most things, nothing always goes according to plan. My idea was to use bright blue, purple, and orange for these doughnuts (I read that those three colors take the best in most baked goods). The orange and purple took immediately and were so rich in color. When I got to the blue color, the moment three drops were dropped in the batter, it immediately turned this dark blue, gray color. I won't lie, in that moment, I was pretty upset and disappointed. I had what I thought was this perfect plan and these doughnuts were going to be gorgeous. Being so upset about the gray color, I put it on the bottom of the doughnut pan so I can hide it. I then layered the orange and purple on top of it and then swirled it. It kind of looked like a galaxy affect. That was the first batch, the second bath I just layered the batter (purple, gray, and orange) without swirling. They turned out pretty great.
For moment there, I was really upset about the colors and thought about scraping the whole thing. Baking has taught me so many things, especially today. Not just how to properly make a cheesecake or doughnut or to roll my blueberries in flour before adding to a batter. Today it taught me that things happen that are out of my control and that I have to be flexible. Just because a mistake happens doesn't mean my recipe is a disaster. I'm proud of how these turned out.
Vanilla Cake Doughnuts
Ingredients:
- 1/2 stick butter, softened
- 1 cup sugar
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 2 large eggs, 1 large egg yolk
- 1 cup milk
- Gel food coloring
Instructions:
- Preheat oven to 375. Spray doughnut pan with baking spray.
- In a medium bowl, using a hand or stand mixer, cream butter, sugar, salt, and vanilla until fluffy.
- In a separate bowl, sift together flour, baking soda, and baking powder.
- Alternating dry ingredients and milk (starting and ending with the dry ingredients), add to wet ingredients on medium-low speed. Scrape sides of bowl as needed.
- Add eggs into the mixture one at a time. Beat until combined.
- Separate batter into three bowls and add three drops of desired food coloring. Mix to combine colors. Then fill three separate piping bags and pipe the batter into prepared doughnut pan wells one at a time.
- Bake for 15 minutes until golden brown and a toothpick can be inserted and comes out clean.
- Allow to cool in doughnut pan for 5 minutes before transferring them to a wire rack. Let them cool completely before dipping them in the chocolate glaze and adding sprinkles.
Chocolate Glaze
Ingredients:
- 1 cup powdered sugar
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Sprinkles
Instructions:
- In a medium bowl, using a hand or stand mixer, add sugar, cocoa powder, salt, milk, and vanilla. Mix until combined.
- Dip doughnuts one at a time into the glaze and let excess drip off. Place on wire rack and sprinkle immediately. Allow glaze to set before putting away.
And that's my recipe! I only have one doughnut pan so it took me a couple of hours to do this recipe. Other than that one moment of doubt, I had so much fun with this! And that chocolate glaze is just perfect. It transports you into a doughnut shop while the bakers are baking and decorating the doughnuts. I know that for a fact, having worked in one for over two years.
As always, my recipe can be changed to how you'd like. Want to use pink, green, and yellow? No problem, that would look just as fun. Mix it up and make it your own. That's my favorite part about baking.
