Once upon a time, back in 2015, I worked at a well-known bakery in Muncie, Indiana while I went to Ball State University. Everything I owned, my car, my clothes, even my hair, smelled like doughnuts. After I graduated and left the bakery, it took me a LONG time to eat a doughnut again. And, honestly, I never thought I'd bake them. But I've been trying to challenge myself to try new things, and I found a cute, mini doughnut pan on sale at Target, so I wanted to try it. Cake doughnuts are my favorite doughnuts and I LOVE chocolate chips, so they made for the perfect doughnut.
I've also been obsessed with making my baked goods look Springy. I found some adorable chicks and bunnies sprinkles at Target that turn out look good with yellow and blue doughnut glaze. I also think the glaze looks cute on the mini doughnuts I baked.
Chocolate Chip Cake Doughnuts
Ingredients:
- 1/2 stick butter
- 1 cup sugar
- 1/4 teaspoon salt
- 1 1/2 teaspoons vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 2 large eggs, 1 egg yolk
- 1 cup milk
- 1 cup mini chocolate chips
- Sprinkles
Instructions:
- Preheat oven to 350. Spray doughnut pan with cooking spray.
- In a medium bowl, using a hand or stand mixer, cream butter, sugar, salt, and vanilla until fluffy.
- In a separate bowl, sift together the flour, baking soda, and baking powder.
- Alternating dry ingredients and milk (starting and ending with the dry ingredients), add to wet ingredients on medium-low speed. Scrape sides of bowls when needed.
- Add eggs into the mixture, one at a time. Beat until all combined.
- Gently fold in mini chocolate chips. Make sure not to overmix.
- Fill large piping bag with batter and fill each doughnut well in the pan 2/3rds of the way.
- Bake for 17-19 minutes for regular doughnuts and 8-10 minutes for mini doughnuts.
- When cool, dip doughnuts into glaze and shake off excess. Add sprinkles immediately after dipping in glaze, and let set up on a wire rack.
Doughnut Glaze
Ingredients:
- 3 cups powdered sugar
- 1/2 cup milk
- Pinch of salt
- Gel food coloring
Instructions:
- In a medium bowl, add sugar, salt, and milk. Mix until combined.
- Add 1-2 drops of desired gel food coloring. Mix well.
As it turns out, I really enjoyed baking doughnuts. It's a lot more fun than selling them, that's 100% for sure. I've never had a chocolate chip doughnut before so I had a fun time creating the recipe for that. And, as always, my taste tester boyfriend was the first one to try them and they were a big hit with him.
