Hello all! It's Summer Break for me and I decided to celebrate my first day of Summer Break by baking a super fast and easy short bread cookie recipe! The more and more I bake, the more I realize that if I were ever to take my baking past my home kitchen and this blog, I would start a company based around cookies. They're just so easy to make and fun to decorate. That being said, I wanted to try a different type of cookie this type. I've gotten pretty good at my chocolate chip cookie recipe and with changing up the flavor of it. I wanted a change today and I've always been interested in how to make short bread cookies. You know, the crumbly goodness that is a short bread cookie. And after doing some research, the cookie I was so scared to make is actually super easy with a lot of ingredients I already had in the house. So I created my very own chocolate chip short bread cookie recipe and it took me about 10 minutes to do. Not only was creating the recipe easy but making the dough was super easy too. I'm very excited to share this super easy recipe with you all!
I'm posting this easy recipe today because I have quite a big bake ahead of me this weekend. My boyfriend and I will be celebrating our three year anniversary on Sunday and what better way to celebrate us than to bake us a cake? So Sunday's recipe and blog post will be a lengthy one celebrating us! I'm so excited finally bake and frost a whole cake!
Anyway, back to my easy and fun short bread cookie recipe!
Chocolate Chip Short Bread Cookies with White Chocolate and Butterscotch Drizzle
Ingredients:
- 1 stick unsalted butter, softened
- 1/2 cup granulated sugar
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup mini chocolate chips
- 1 cup white chocolate chips
- 1 cup butterscotch chips
- Sprinkles of choice
Instructions:
- Preheat oven to 350.Line a baking tray with parchment paper or a silicone mat.
- In a medium bowl, cream together butter and granulated sugar.
- Slowly add in to the bowl flour and salt. Combine. It will be crumbly. Add in mini chocolate chips and gently combine.
- Lay out a piece of parchment paper on a counter and spoon out crumbly dough. Using hands, knead dough until it all sticks together. Using another piece of parchment paper, place it on top of the dough, and roll the dough out to preferred thickness. Using cookie cutter shapes, cut out cookies and place them on baking tray 1 inch apart.
- Bake cookie for 15 minutes until golden brown around the edges. Let cool on tray for 5 minutes before transferring to wire rack.
- Once cookies are cooled completely, melt white chocolate chips and butterscotch chips in separate microwave safe bowls (use 20 second intervals and mix between intervals). Drizzle on white chocolate first, then butterscotch. Immediately sprinkle on sprinkles. Let the white chocolate and butterscotch set before putting in container.
When I say that this recipe is easy, I mean it! I love to make baking fun. And I do that by adding in color whenever I can. I had the idea to dye the white chocolate before drizzling it but I didn't want a color that would clash with the tan of butterscotch, so instead, I left the white chocolate alone and added a pinch of white, purple, and pink sprinkles. You know, I had to add a little bit of my Caroline Splash to it.
The cool thing about baking is you can make however much of something you want. All you have to do it play with the measurements. Since I'm doing such a big bake this weekend, I didn't want to bake a lot of cookies that would just ultimately go to waste. This recipe made 6 big cookies (I used a cup to cut out the shapes). If you wanted to make smaller cookies, I'm sure you could get 12- 16 out of this recipe. And if you want more, double the recipe. If you want less, cut the recipe in half.
