Happy Sunday! It's a rainy Spring day here in Chicago. I don't know how I did it but I managed to pull myself out of bed to make my boyfriend one of his favorite desserts: key lime pie. But mine is with a twist! I love the idea of no bake desserts. Some might think they're too easy but I can promise you, I put in quite a bit of work for these little pies. Instead of making a whole pie, I decided to make mini, individual ones. I'm not a fan of whipped cream or key lime pie, so I wanted to make sure there was no pressure for my boyfriend to eat a whole pie. I used silicone cupcake liners and a cupcake tin and voila! Mini key lime pies. And I wanted to make sure they were Springy, so I piped the whipped cream on top like a flower, with the green sprinkles in the middle.
No Bake Crust
Ingredients:
- 1 1/2 cups honey graham cracker crumbs
- 3 tablespoons granulated sugar
- 6 tablespoon unsalted butter, melted
- Pinch of salt
Instructions:
- Line cupcake tin with paper or silicone liners.
- In a microwave safe bowl, melt the butter.
- In a quart size bag, add in two full sized graham crackers. Crush until majority of the bag is filled with crumbs and there's 1 1/2 cups. OR buy graham cracker crumbs in a box.
- Add graham cracker crumbs, sugar, salt, and butter. Combine.
- Using a tablespoon, scoop one tablespoon of crust into each liner. Push down to form the crust.
Whipped Cream Topping
Ingredients:
- 2 cups heavy whipping cream
- 7 tablespoons powdered sugar
Instructions:
- In a chilled medium bowl, add in heavy whipping cream and sugar. Using a stand or hand mixer, beat the cream and sugar until stiff peaks form.
- Save ne cup of the whipped cream for the filling, refrigerate the rest for later.
No Bake Key Lime Filling
Ingredients:
- 8 ounces of cream cheese
- 1 cup whipped cream, saved from before
- 1 can of sweetened condensed milk
- 1/2 cup key lime juice
- Green gel food coloring
- Sprinkles
Instructions:
- In a medium sized bowl, using stand or hand mixer, beat the cream cheese until smooth.
- Add in the sweetened condensed milk and combine.
- Add in the key lime juice and combine.
- Once all ingredients are combined, gently fold in the saved whipped cream from before.
- Add one or two drops of green gel food coloring to ensure the green key lime color.
- Scoop filling into the liners on top of the graham cracker crust.
- Chill for three hours. Decorate with whipped cream and sprinkles as desired.
If you like the tart lime flavor (like I do!), then these mini key lime pies are for you! They were so simple to make and I had a lot of fun making them. I love decorating things so it only made sense for me to add sprinkles to them.
