It's muffin time! So, my boyfriend likes bananas and I love peanut butter and chocolate. I wanted to create something that we both would like. Not only that but I've been having some body image issues lately and wanted to come up with a baked good that's kind of on the healthier side. I saw the bananas sitting on my counter and thought "what would go well with these?" and peanut butter and chocolate popped into my mind. And those three flavors are beyond delicious.
Caroline's Peanut Butter Banana Chocolate Chip Muffins Recipe:
Ingredients:- 3 ripe bananas, mashed (about a cup and a half)
- 1/4 cup of honey (or more depending on how sweet you want them)
- 1/2 cup of light brown sugar
- 1 large egg
- 1/3 cup of milk
- 1/2 cup creamy peanut butter
- 2 teaspoons vanilla extract
- 2 cups flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- Mini chocolate chips
Instructions:
- Preheat oven to 350 degrees. Line muffin pan with liners. Set aside.
- In a medium bowl, whisk the mashed bananas, honey, brown sugar, egg and milk together until combined. Whisk in the peanut butter until combined. Then add in the vanilla extract. Set aside.
- In a large bowl, whisk the flour, cinnamon, baking soda, baking powder, and salt. Slowly stir the dry ingredients into the wet ingredients and gently whisk. Add in the mini chocolate chips last, stirring once or twice. Muffin batter can easily be overmixed so be careful. Stir as little as possible until no bubbles or flour pockets remain.
- Fill muffin liners about 3/4 full, almost all the way up to the top. Bake the muffins for 12 minutes. Insert a toothpick, and if it comes out clean, muffins are done.
