Hi everyone! It's been a crazy couple of weeks for me with this past week being the most stressful and traumatic. I haven't been able to relax properly, and I'm exhausted, but I thought that maybe baking something would help me relax. I love baking and I think of it as one way of self-care for me. So today, I created, in my opinion, the perfect sugar cookie with a glaze. And by perfect, I mean the cookie isn't as sweet and sugary as a normal sugar cookie because I knew that the glaze would bring a big sugar hit. I've had a hard time balancing the sweet and salty aspects of baking but it all came together for me today!

Ingredients:
- 2 3/4 cups all purpose flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 teaspoons vanilla extract
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 1/2 cups granulated sugar
- 1 large egg
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt combined.
- In a large bowl, use a hand mixer or stand mixer to cream together the butter and granulated sugar until it's light and fluffy. Then beat in the egg and vanilla.
- Once the butter and sugar mixture is combined, slowly stir in the dry ingredients until a dough starts to form. (After about the second cup of dry ingredients being added, I found that it's easier to get in there with your hands to form the dough).
- Cover the bowl and refrigerate for about an hour.
- Heat oven to 350 degrees. Line a cookie sheet with parchment paper (or if you use silicone mats, those work too. I use mats so I don't have to waste parchment paper).
- Bake for 11 minutes until the cookies are just set in the middle. Let cookies cool on cookie sheet for about five minutes before moving them to a cooling rack.
- While the cookies cool, start making the glaze
- Make sure the cookies are all the way cool or the glaze will melt right off the cookies.

Ingredients:
- 1 1/2 cups of powdered sugar
- 1/2 - 1 teaspoon of vanilla extract
- 2 - 2.5 tablespoons of water
- Salt to taste
Instructions:
- In a medium bowl, whisk together the powdered sugar, vanilla, and water. It should be thick. If it turns out to be too think, add in a bit more water to loosen it up. If it turns out to be too thin, add in a little bit more sugar to thicken it up. With glaze, you should be able to drizzle a little line of it with the whisk. When you do this, the line should hold for a few seconds before fading back into the icing. That's when you know it's ready to be used.
- If desired, you can add gel food coloring to the icing for fun colors to decorate your cookies with.
- For decorating, you can use a piping bag to make a design on your cookies or you can just dip your cookies into the icing (which is what I did).
- Let your cookies set until the glaze hardens. Store them in a sealed container and enjoy!
As always, I couldn't resist trying one of these! The cookie itself is not too sweet, soft, and chewy (just how I like my cookies!). The vanilla glaze brings in that extra bit of sweetness sugar cookies have. I created a not as sweet cookie because I knew that the glaze would be sweet. I don't want to make a cookie that is so sweet it makes your teeth hurt. I decided to go with purple and teal colored glazes because they're pretty and springy and just look so fun together!
