Sugar Cookies with Teal and Purple Glaze

        Hi everyone! It's been a crazy couple of weeks for me with this past week being the most stressful and traumatic. I haven't been able to relax properly, and I'm exhausted, but I thought that maybe baking something would help me relax. I love baking and I think of it as one way of self-care for me. So today, I created, in my opinion, the perfect sugar cookie with a glaze. And by perfect, I mean the cookie isn't as sweet and sugary as a normal sugar cookie because I knew that the glaze would bring a big sugar hit. I've had a hard time balancing the sweet and salty aspects of baking but it all came together for me today!


Caroline's Sugar Cookie Recipe: 

Ingredients: 

  1. 2 3/4 cups all purpose flour
  2. 1/2 teaspoon baking powder
  3. 1 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 2 1/2 teaspoons vanilla extract
  6. 1 cup (2 sticks) unsalted butter, room temperature
  7. 1 1/2 cups granulated sugar
  8. 1 large egg
Instructions: 

  1. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt combined. 
  2. In a large bowl, use a hand mixer or stand mixer to cream together the butter and granulated sugar until it's light and fluffy. Then beat in the egg and vanilla. 
  3. Once the butter and sugar mixture is combined, slowly stir in the dry ingredients until a dough starts to form. (After about the second cup of dry ingredients being added, I found that it's easier to get in there with your hands to form the dough). 
  4. Cover the bowl and refrigerate for about an hour.  
  5. Heat oven to 350 degrees. Line a cookie sheet with parchment paper (or if you use silicone mats, those work too. I use mats so I don't have to waste parchment paper). 
  6. Bake for 11 minutes until the cookies are just set in the middle. Let cookies cool on cookie sheet for about five minutes before moving them to a cooling rack. 
  7. While the cookies cool, start making the glaze 
  8. Make sure the cookies are all the way cool or the glaze will melt right off the cookies. 

Caroline's Vanilla Glaze Recipe:

Ingredients: 
  1. 1 1/2 cups of powdered sugar
  2. 1/2 - 1 teaspoon of vanilla extract 
  3. 2 - 2.5 tablespoons of water
  4. Salt to taste
Instructions: 
  1. In a medium bowl, whisk together the powdered sugar, vanilla, and water. It should be thick. If it turns out to be too think, add in a bit more water to loosen it up. If it turns out to be too thin, add in a little bit more sugar to thicken it up. With glaze, you should be able to drizzle a little line of it with the whisk. When you do this, the line should hold for a few seconds before fading back into the icing. That's when you know it's ready to be used. 
  2. If desired, you can add gel food coloring to the icing for fun colors to decorate your cookies with. 
  3. For decorating, you can use a piping bag to make a design on your cookies or you can just dip your cookies into the icing (which is what I did). 
  4. Let your cookies set until the glaze hardens. Store them in a sealed container and enjoy!  

        As always, I couldn't resist trying one of these! The cookie itself is not too sweet, soft, and chewy (just how I like my cookies!). The vanilla glaze brings in that extra bit of sweetness sugar cookies have. I created a not as sweet cookie because I knew that the glaze would be sweet. I don't want to make a cookie that is so sweet it makes your teeth hurt. I decided to go with purple and teal colored glazes because they're pretty and springy and just look so fun together!
