My First Big Bake: M&M and Chocolate Chip Cookies

     I've always had a love of baking. My family used to do Christmas cookies and other goodies every year since I was a little girl. Lately, because of this pandemic and the state of 2020, I've discovered that baking is a good way for me to blow off some steam and find a little bit of happiness in all of the craziness. I used to find recipes I'd like and follow those. However, I decided that I want to really get into baking and start making my own recipes. I knew I wanted to start off easy and do something that wouldn't make me regret my decision about making my own recipes. So I decided on a cookie. But not just a chocolate chip cookie. I wanted to add some pizazz to it. And what's more "pizazz" than M&Ms? So today, I created a recipe and made some really delicious M&M and chocolate chip cookies. I had no idea what I was doing but I remembered the basics of a chocolate chip cookie recipe and just built on that. 


Caroline's M&M and Chocolate Chip Cookie Recipe: 

Ingredients: 

  1. 1 cup (1 stick) unsalted butter
  2. 1/4 cup packed light brown sugar
  3. 1/2 cup granulated sugar
  4. 1 3/4 cups of all purpose flour
  5. 1 tablespoon vanilla extract**
  6. 1/2 teaspoon salt (or however much to taste)
  7. 1/2 teaspoon baking soda
  8. 1 large egg
  9. 1 cup M&Ms
  10. 1/2 cup semi-sweet chocolate chips
Instructions: 

  1. Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Make sure to trim the sides! 
  2. Put butter in a small bowl and microwave until melted (took me 50 seconds to fully melt the stick). Let it cool for a few seconds. You don't want the butter hot. 
  3. Mix together the butter, light brown sugar, and granulated sugar until combined. 
  4. Once the butter and sugars are combined, add the egg and the vanilla extract. 
  5. Add in the flour, baking soda, and salt. Stir until everything is combined. The dough will be slightly sticky. 
  6. Slowly stir in the chocolate chips and M&Ms. The dough should be full of chocolate chips and M&Ms! 
  7. Using a cookie scoop, scoop the dough and round it into balls and place on the lined baking sheets. I was able to fit 11 cookies on both of my baking sheets. 
  8. Bake the cookies for 11 minutes. The cookies will be just done and still chewy in the middle.
  9. Let cool on a wire rack (or on a towel like I did) completely. They will firm up a bit more as they cool. 
**Note: I love me some vanilla. If you don't LOVE the flavor of vanilla extract, maybe cut this down to half a tablespoon or less depending on your taste. 
    

    After letting my cookies cool, of course I had to try one. They are chocolatey, vanilla-y, and perfect for the holidays! Prepping the dough took maybe 15 minutes all together. And then 22 minutes of baking the cookies. It was truly fun and an easy recipe to start me on my journey of baking with my own recipes!
