Happy First Day of Spring! This past week has been a rough one for me. One of my cats had to have surgery and then I had gotten bitten and needed to go to the doctor for some antibiotics. Thankfully, both my cat and I are doing great! Both on the path to a speedy recovery. To celebrate the fact that my follow-up appointment went well yesterday, I decided to make some chocolate cookies. But since it's also the First Day of Spring, I wanted to bring some color to them. I don't know if you can tell or not, but I am obsessed with glaze on cookies. Sometimes, I feel like frosting and buttercream can be too sweet, but with the glaze you can control the sweetness level by adding in just a pinch of salt. However, I understand that not every cookie needs a glaze so I have pictures of both glazed and sprinkled cookies as well as plain cookies!
Chocolate White Chocolate Chip Cookies Recipe:
Ingredients:- 2 1/2 sticks butter, softened
- 2 cups sugar
- 2 large eggs
- 3 teaspoons vanilla
- 2 cups all-purpose flour
- 1 cup cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups white chocolate chips
- Preheat oven to 350.
- In a medium bowl, and using a hand mixer or stand mixer, cream together the softened butter and sugar until it's light and fluffy. Add in the eggs one at a time. Add vanilla.
- In a small bowl, sift together flour, cocoa, baking soda, and salt. Slowly add to wet ingredients. Mix until all ingredients are combined.
- Once all ingredients are combined, gently fold in white chocolate chips.
- Using a spoon, scoop batter onto parchment lined cookie trays and bake for 7-8 minutes, until cookies are soft and chewy.
Ingredients:
- 1 cup of powdered sugar
- 2 - 2.5 tablespoons of water
- Salt (this is optional)
Instructions:
- In a medium bowl, whisk together the powdered sugar and water. It should be thick. If it turns out to be too thick, add in a bit more water to loosen it up. If it turns out to be too thin, add in a little bit more sugar to thicken it up. With glaze, you should be able to drizzle a little line of it with the whisk. When you do this, the line should hold for a few seconds before fading back into the glaze. That's when you know it's ready to be used.
- If desired, you can add gel food coloring to the icing for fun colors to decorate your cookies with.
- For decorating, you can use a piping bag to make a design on your cookies or you can just glaze them with a spoon in a zigzag pattern like I did.
- Let your cookies set until the glaze hardens. Store them in a sealed container and enjoy!
