Chocolate White Chocolate Chip Cookies

Happy First Day of Spring! This past week has been a rough one for me. One of my cats had to have surgery and then I had gotten bitten and needed to go to the doctor for some antibiotics. Thankfully, both my cat and I are doing great! Both on the path to a speedy recovery. To celebrate the fact that my follow-up appointment went well yesterday, I decided to make some chocolate cookies. But since it's also the First Day of Spring, I wanted to bring some color to them. I don't know if you can tell or not, but I am obsessed with glaze on cookies. Sometimes, I feel like frosting and buttercream can be too sweet, but with the glaze you can control the sweetness level by adding in just a pinch of salt. However, I understand that not every cookie needs a glaze so I have pictures of both glazed and sprinkled cookies as well as plain cookies!


Chocolate White Chocolate Chip Cookies Recipe:

Ingredients:

  1. 2 1/2 sticks butter, softened
  2. 2 cups sugar
  3. 2 large eggs
  4. 3 teaspoons vanilla
  5. 2 cups all-purpose flour
  6. 1 cup cocoa
  7. 1 teaspoon baking soda
  8. 1/2 teaspoon salt
  9. 2 cups white chocolate chips

Instructions:
  1. Preheat oven to 350.
  2. In a medium bowl, and using a hand mixer or stand mixer, cream together the softened butter and sugar until it's light and fluffy. Add in the eggs one at a time. Add vanilla. 
  3. In a small bowl, sift together flour, cocoa, baking soda, and salt. Slowly add to wet ingredients. Mix until all ingredients are combined. 
  4. Once all ingredients are combined, gently fold in white chocolate chips. 
  5. Using a spoon, scoop batter onto parchment lined cookie trays and bake for 7-8 minutes, until cookies are soft and chewy. 

Easy Glaze Recipe:

Ingredients: 

  1. 1 cup of powdered sugar 
  2. 2 - 2.5 tablespoons of water
  3. Salt (this is optional)

Instructions: 

  1. In a medium bowl, whisk together the powdered sugar and water. It should be thick. If it turns out to be too thick, add in a bit more water to loosen it up. If it turns out to be too thin, add in a little bit more sugar to thicken it up. With glaze, you should be able to drizzle a little line of it with the whisk. When you do this, the line should hold for a few seconds before fading back into the glaze. That's when you know it's ready to be used. 
  2. If desired, you can add gel food coloring to the icing for fun colors to decorate your cookies with. 
  3. For decorating, you can use a piping bag to make a design on your cookies or you can just glaze them with a spoon in a zigzag pattern like I did. 
  4. Let your cookies set until the glaze hardens. Store them in a sealed container and enjoy!

Before I tried these cookies for myself, I had my boyfriend try one with some glaze and sprinkles on it and then had him describe the cookie in three words and he said: decadent, scrumdiddlyumptious, and tasty. In all fairness, he was correct. When creating this recipe, I thought that maybe the 1/2 teaspoon of salt would be too much but since the white chocolate chips are on the sweeter side it balanced it out well. And of course, I had to bring some color to these dark cookies because it's Spring but that was my choice (they taste just as good without the glaze too!). A little pop of color is always a fun choice. I went with yellow but you can pick any color!
